Song-sao Noodles, or Madame Song's Noodles, which is very popular in Chengdu, is a type of souped noodles with shredded perch. The inspiration of this snack came from Song-sao Yugeng, a thick soup with shredded perch, ham and ginger, a famous snack in Hangzhou, Zhejiang Province. In the Song Dynasty (960 A.D-1279 A.D), a family lived in a thatched cottage on the bank of Hangzhou's West Lake. The husband died young, leaving his wife Songsao a widow and his 12-year-old younger brother in her care. One day, the younger brother caught a cold. Songsao made him some fish soup, adding pepper, ginger, sherry, and vinegar. After one bowl of this delicious fish soup, the boy soon recovered. People in Chengdu improved on this snack by using the shredded perch soup to cook noodles.
