Sweet and Sour Boneless Yellow Croaker

Ingredients:

800g. yellow croaker

25g. carrot

25g. asparagus

80g. shrimp

15g. soaked mushroom

15g. peas

5g. bruised garlic

5g. bruised ginger  

(A)①1 tbsp. salt

②1 tbsp. cooking wine

③1 tbsp. pepper powder

(B)①1 tbsp. sugar

②1 tbsp. salt

③1 tbsp. cooking wine

④2 tbsp. vinegar

⑤2 tbsp. ketchup

⑥2 tbsp.starch

Methods:

1.Clean and plucking the yellow croaker, cut the head, scale and fins off. Dinidiate and take the bones off, cut cross lightly and pickle by seasoning (A).

2.Dice and cook ingredient ②~④.

3.Preheat the pan with salad oil. Drain the fish and coat with starch. Pour the fish into the pan up side down, fry till crisp, dish up.

4.Fry garlic, ginger, 100g water, ingredient ②~⑤ and seasoning ①~⑤ till boiled, thicken the sauce, pour on the fish, done.
