Fried Sliced Fish on Toast

Character: Soft and tender, redolent and smooth.

Ingredients:

200g. sea-bream

180g. pork tenderloin

2 eggs

80g. shrimp

5g. caraway leaf

5g. minced ham

25g. water chestnut 

(A)①1/2 tbsp. salt

②1/4 tbsp. monosodium glutamate

③1 tbsp. starch

(B)①1/2 tbsp. salt

②1/4 tbsp. monosodium glutamate

③1/2 tbsp. pepper powder

④1/2 tbsp. starch

⑤1 tbsp. cooking wine  

Methods:

1.Peer the sea-bream's skin off boil the pork tenderloin till well done. Cool both ingredients off, then slice into 5 cm by 2.5 cm (12 pieces). Coat the seabream with egg white and seasoning (A).

2.Devein and mash the shrimp, mince the water chestnut. Mix the shrimp, water chestnut and seasoning (B) well.

3.Coat starch on each single pork tenderloin, smother with mashed shrimp, then spread caraway leaf and minced ham on it.

4.Preheat the pan with salad oil, take the oil off, put the pork tenderloin on the bottom, sea-bream on the top. Saute till will done.
