Mongolians mainly inhabit the Inner Mongolia Autonomous Region and its adjacent provinces and districts. Mongolian herders subside upon beef, lamb and dairy products, supplemented by grains and vegetables. Brick tea is an indispensable drink for herders. One of the traditional customs of Mongolia is the drinking of salty milk tea which is brewed from brick tea.
    在牧区,他们习惯于“一日三餐茶,一顿饭”。所以,喝咸奶茶,除了解渴外,也是补充 人体营养的一种主要方法,每日清晨,主妇的第一件事就是先 一锅咸奶茶,供全家整天享用。
In pastoral areas herders are accustomed to “drinking tea three times a day and eating only one meal”. Besides quenching thirst, salty milk tea serves as a major supply of nutrition to the body. Every morning, the first job of housewives is that of brewing a pot of salty milk tea for the whole family‘s consumption throughout the day.
    蒙古族喜欢喝热茶,早上,他们一边喝茶,一边吃炒米,将剩余 的茶放在微火上暖着,以便随时取饮。通常一家人只在晚上放牧回家才正式用餐一次,但早、中、晚三次喝咸奶茶,一般是不可缺少的。
Mongolians like to drink hot tea. They drink tea and eat fried rice in the morning, and put the remaining tea on the fire to keep it warm for drinking as they please. Usually the whole family has only one formal meal once they have returned home at nighttime after herding. However, the drinking of salty milk tea three times- morning, noon and night- is an indispensable aspect of daily life.
    蒙古族喝的咸奶茶,用的多为青砖茶或黑砖茶,煮茶的器具 是铁锅。煮咸奶茶时,应先把砖茶打碎,将洗净的铁锅置于火上,盛水2~3千克,烧水至刚沸腾 时,加入打碎的砖茶50~80克。当水再次沸腾5分钟后,掺入牛奶,用奶量为水的五分之一左右,稍加搅动,再加入适量盐巴。等到整锅咸奶茶开始沸腾时,才算把咸奶茶煮了,即可盛在碗中待饮。
Mongolians use iron pans to brew salty milk tea, usually with cyan brick tea or black brick tea. When brewing the salty milk tea, you should first break the tea brick, put the washed iron pan on the fire, and then add 2 or 3 kg of water. When the water begins to boil, add 50 to 80 grams of broken brick tea into the water. When the water has been boiling for 5 minutes, add some milk –a 1:5 milk to water ratio- then add the appropriate amount of salt after stirring for a while. When the whole pot of salty milk tea begins to boil, the salty milk tea is ready and can be put in a bowl for drinking.
